I'm sooo looking forward to the warmer months so that I can get back out on my bike and visit the trails and beaches again

Nice bike
I had a better bike than this, but it fell off the back of my truck one time last spring, and someone must have pulled over and picked it up before I noticed it was gone. When I put my truck up for sale, I wasn't planning on selling my utility trailer as well, but I was on line at the time and needed to a new bike - even if it was a "box brand" from Walmart. So I sold my Utility trailer, then bought the bike you saw pictured

I wish I could ride, but I have torn minuses I have not had surgery on.

Sorry, you lost your better bike.

I ride as much as I can. I have Plantar fasciitis in the bottom of both my feet, and 10% of the Meniscus in my left knee was surgically removed after being overstretched in "89 and then torn in' 09. It's not fun dealing with a knee that still pops in & out of place at will when I step wrong or just turn too fast. And trust me it's PAINFUL when my knee pops.

If I don't try to keep riding it"ll just make things worse considering that i've damaged both my knees in one way or another since I

I have Plantar fasciitis as well. I wear a cloth brace on my left knee and the Elliptical Cross Trainer might do well for you during winters
As with many other things that would help during the winter, it's all about the expense

For those that love to cook; I'm having Spaghetti for dinner tonight and am cooking my homemade gravy to go with it😋. And before anyone asks -I'm not Italian, I'm German 😁 It's just that I enjoy cooking a variety of foods from different nationalities 😊
Your sauce looks delicious. What's in there besides ground meat?

These days [since I've been on a no-red meat diet], I've been making a Sicilian sauce that is paste and garlic and herbs.
Diced tomatoes, green pepper, onion, garlic, and mild ground sausage. I've got meat balls that will be going in shortly. Seasoning has just been salt, black pepper, Italian seasoning, and Basil
Sounds delicious. It looks good and thick.
I try not add any extra water to it, just th liquid from the produce and the tomatoes sauce (plane sauce). Depending on how large of a batch I'm making is dependent on how much paste I use for thickener. I also use baking soda to cut the acid rather than sugar. This is good for my dietary needs being a diabetic
Interesting; I've not used baking soda or sugar. I have used sweet onion, carrots [remove later], sweet basil & a small amount of lamb bone with meat on.
Never thought about using lamb or lamb bone in my sauce, I'll have to give that a try sometime
The lamb adds richness & adds to my combo for sweetness.

Though my family used sausage, I've not made a sauce with sausage and lamb.

I used pork, a small amount of lamb, and sometimes meatballs.

I love pork sauce. My grandmother used pig feet, and I did so for years. - but it gets gelatinous when you refrigerate and freeze it - and that's ok. I just moved away from the feet to pork bones.

I also added EVOO parmigiana region and sometimes Romano cheeses.
I really don't like adding any of the cheese to my sauce. Though I have had it that way, it's just not really my thing

The Sicilian sauce does not call for cheese.
I wouldn't know one version from another. As I said in my post, I'm German - lol
As to the onions, I use white onion. The sweet onions are okay but I like to keep the natural sweetness of the tomato product versus adding anything else to add sweetness. The best part of using baking soda is it enhances the natural sweetness of the tomato, reduced the acid and helps bring any other impurities to the surface while the pot is simmering. From there you just skim off the extra water, oil and acids

That is interesting about the baking soda - I see the water on top in your picture.
Oh that's water, oil and the white foam that you can't see too good in this picture is the acids
I like things thick
Hmmm, I couldn't imagine what you might be referring to...... LMAO
Do you cook your meatballs or toss them raw in the cause?
I have pre cooked meatballs from Dino's

My sister buys precooked meatballs

We have a meat plant in Utica/Schuyler thatmakes meat balls, sausage patties, sausage links, and bulk ground sausage and sell it commercially

That looks delicious! 🍝
